چکیده

Lactic acid bacteria (LAB) have been extensively explored as potential biopreservants. They could produce substances with antimicrobial properties such bacteriocins and organic acids which can also be the cause of antagonistic activity shown by LAB. Thus, objective this study is to assess LAB isolated from fermented Oreochromis niloticus against foodborne pathogens determine a surface decontaminant raw chicken breast Tilapia fish fillet. The has affect Escherichia coli, Salmonella typhimurium, Staphylococcus aureus. When was introduced mixed cultures E. S. aureus, growth those drastically reduced proven that grows stronger more stable while eliminating pathogens. their cell-free supernatant (CFS) were into fresh fillet, where coli recorded. Both cell CFS showed inhibition on fillet in range 0.16 1.28 log10 reduction 0.12 1.12 reduction, respectively. In conclusion, results above suggest O. decontaminant. Additionally, both used biopreservative for due very good toward

Antagonistic activity and antibiotic sensitivity of Lactic acid bacteria from fermented dairy products

Lactic acid bacteria (LAB) were isolated from different fermented dairy food and identified as Lactobacillus fermentum, Lactobacillus plantarum, Lactobacillus casei and Lactobacillus brevis. The cell free supernatant of the selected Lactic acid bacteria were able to inhibit the growth of all organisms, used in this study (E. coli, Klebsiella, Pseudomonas, Streptococcus, Proteus). The antibiotic...

Determination of antibiotic resistance of lactic acid bacteria isolated from traditional Turkish fermented dairy products

In this study, the antibiotic resistance (AR) of lactic acid bacteria (LAB) isolated from traditional Turkish fermented dairy products was investigated. Yogurt, white cheese, tulum cheese, cokelek, camız cream and kefir as dairy products were collected from various supermarkets. Lactic acid bacteria such as Lactobacillus spp., Streptococcus spp., Bifidobacterium spp., and Enterecoccus spp. were...

Screening and Characterization of Lactic Acid Bacteria from Fermented Milk

In this study, different strains were isolated from the fermented milk in Vellore and were subjected to preliminary screening and 45 isolates were obtained and it was characterized and examined for the presence of probiotic properties like cholesterol assimilation, exopolysaccride production and antibiotic resistance. The cholesterol assimilation ranged from 28-83%, which is significantly highe...

Isolation and selection of lactic acid bacteria from Thai indigenous fermented foods for use as probiotics in tilapia fish Oreochromis niloticus

In this study, 119 bacterial strains were isolated from various samples such as healthy tilapia fish (Oreochromis niloticus), water and sediment around the culture fish-cages, and several kinds of traditional fermented foods. These bacterial isolates were screened for antibacterial activities against bacterial fish pathogens i.e. Aeromonas hydrophila, A. caviae and Streptococcus agalactiae usin...

Probiotic Properties and Physicochemical Potential of Lactic Acid Bacteria Isolated from Moroccan Table Olives

Background: Lactic Acid Bacteria are a group of Gram-positive bacteria which are widely used in the food industry as organic ferments called starter cultures. In this study, Enterococcus faecium, Leuconostoc mesenteroides, Lactococcus lactis, Weissella paramesenteroides, and Lactiplantibacillus plantarum isolated from Moroccan table olives were tested for their acquisition of probiotic and tech...
